Estimation of Vitamin C and the Fructose Levels in Some Medicinal Plants and their Effects on Iron Bioavailability in Rats

Iron deficiency is considered as a common problem facing the general world population. In current research, experiments were conducted to evaluate effects of aqueous extracts Acacia senegal (Gum Arabic, GA), Spinacia oleracea (spinach), Zea mays (corn), and Capsicum annuum (red chili pepper) on iron ferritin levels in rats. Vitamin C fructose first estimated these plants by using High-Performance Liquid Chromatography (HPLC). The results showed that GA extract contained highest level (853 mg.L-1), followed red pepper (635 corn (521 spinach (271 mg.L-1) extracts. Also, vitamin estimation 3.376, 0.645, 0.579, 0.347 mg/ml spinach, pepper, corn, GA, respectively. Next, thirty male albino rats (age 8-12 weeks, weight 120-200 g) divided randomly into six groups, each kept separate polypropylene rat cage. Treatments with various plant following CRD complete random design, five replicates for treatment. lipid profile test revealed treatment caused reduction serum TC, TG, LDL, VLDL, HDL treated (76.25, 55.25,23, 15.25, 38 mg/dl , respectively), compared other Evidence from this study suggests higher group all enhances process formation, possibly via increasing bioavailable iron.
